I have spent my working career, which has been since the age of 13, in the restaurant industry. My experience extends from bar work to waitering, chef to managements of both BOH and FOH as well as multiple sites. I've also had extensive coffee and barista training through "Starbucks". I have worked with both independent and national franchised stores and therefore have knowledge of Brand compliance and maintenance as well as internal auditing.
During my career I have also studied Computer Programming, Web Design, Database Management as well as F&I Management.

Managed to get the labour costs down and GPs on both food & beverage in line. Staff training. Attention to detail regarding the day to day administrative work. Grew customer satisfaction back to its former glory.
Redesigned all menus along with costings. I trained all the staff from scratch, along with handling the sound set-ups for live music, comedy shows, DJs and the odd fashion show. Was very hands on in the daily running of the business.
Worked closely with the founders of the brand - Brian Altridge & Paul Dempsey - together we developed the training schedules used in all stores, from waiters all the way management and operators. I was considered as a problem solver and got transferred to other stores in order to get their cost of sales, budgets & recipes in line
Ran both the Pretoria and Midrand stores in line with the owner's requirements and standards. Responsible for all ordering, costings and daily operations.
